Join us at the tasting room on Saturday, October 20 from 2pm to 8pm for the 3rd Annual Festival of Oak. We’ll be raiding the Wood Cellar and tapping 6 new barrel-aged beers and be releasing FOUR different wild, barrel-aged sours in 750ml bottles (details below). Two special firkins will be available. Taplist and firkins to be announced at a later date.

Butcher Salt and Food Trip will be slinging food and lawn games will be available on our patio. Weather-permitting, we’ll also be doing a live coolship brewday so you can see the funk in action.

Spontané 2018: a blend of one- and two-year-old spontaneously-fermented wild ales that were brewed using our custom-built coolship, where the beers picked up loads of flora and bacteria to create a funky base. After aging in barrels and foeders, beers were chosen from several different batches to create a complementary blend of funk, acid, and tartness. The blended sour was then refermented in the bottle to help round-out this complex, truly spontaneous ale. $20, Limit 4. 500 bottles available.

Ink’s Quill: This overfruited sour is a blend of foeder-aged beer that was conditioned on blackberry and raspberry. $20, Limit 2. 250 bottles available.

Tubular: Conditioned on tangerines and coconut flakes, this single blend of foeder-aged beer is overwhelmingly tropical, lightly funky, and pours a bright orange. $20, Limit 2. 250 bottles available.

Fortunella: This spontaneously fermented, foeder-aged sour was transferred to used Cognac barrels where it aged on 40 pounds of fresh kumquats. The citrus and Cognac notes combine with the barnyard funk of the base sour to create a rich depth of flavor in this dry, lightly tart sour. $20, Limit 4. 500 bottles available.
