“Into the Woods” Exploration Series #17:
It’s alive! IT’S ALIVE!! In the wood of the barrels the magic happens. Utilizing wild yeasts and bacteria, brewers blend science and art during fermentation and aging to get just the right complexity. Patience and trust are employed to allow the symbiotic relationships of these living organisms to do what they will, and create a truly living masterpiece.
